Raisin Sauce

This is a fantastic sauce for baked ham. My mother clipped it off a bag of raisins years ago and it has been a family favorite. Whenever I serve it, people ask what it is, but everyone loves it!

Makes about 2c. sauce

1/2 c. raisins

1 c. water

1/4 c. dark rum

2/3 c. brown sugar

1 Tbsp. cornstarch

1/4 tsp salt

2 Tbsp. white vinegar

1 Tbsp. unsalted butter

Simmer water and raisins for 5 minutes in a small saucepan. Blend brown sugar, cornstarch and salt in a separate bowl. Using a flat whisk, stir the sugar mixture into the raisins and water. Simmer for 2 minutes until clear and thickened. Remove from heat. Add vinegar and butter and blend. Serve immediately, or reheat just before serving over low heat.
