Teriyaki Sauce

Yields about 3 c. of sauce
1 c. soy sauce, preferably low sodium
3/4 c. sugar
3/4 c. unsalted mirin (sweet rice wine)
2 cloves garlic, pressed
1/2 tsp. ground ginger (optional)
3 Tbsp. cornstarch
1 c. water
1 tsp. rice vinegar
1/2 tsp. sesame oil

Combine water, soy sauce, sugar, mirin, cornstarch, garlic, and ginger in a medium saucepan. Bring to a simmer, simmer for 3 minutes. Remove from heat, add vinegar and oil, and extra water to thin (if desired).
