Leona Cracknell's Granola Bars

These are absolutely fantastic alternatives to the store bought varieties of granola bars, not only that you can customize them with whatever ingredients you want. All the ingredients marked opt. you can choose to vary to taste. All in all, you shouldn't add much more than 3-1/2 c. of mix-ins.

Makes 1 half sheet pan (about 32 bars)

  • 1c. melted margarine
  • 2/3 c. corn syrup
  • 1-1/2 c. brown sugar (255g)
  • 2 tsp. vanilla
  • 3 c. rolled regular oats (279g)
  • 3 c. crisp rice cereal (84g)
  • 1 c. brown flour
  • 1 c. white flour
  • 1 tsp baking soda
  • 1-1/2 c. coconut (opt.)
  • 3/4 c. raisins (opt.) (100g)
  • 1 c. chocolate chips (opt.)
  • 1 c. pecans, almonds hazelnuts sunflower seeds (opt.)
  • marshmallows, white chocolate, dried fruit, etc!
Preheat oven to 375F. Melt first 4 ingredients together in a small saucepan, but do not boil. Mix remain ingredients in a large bowl, except for chocolate chips, then add the melted mixture over top. Stir until well incorporated. Allow to cool partially and then add chocolate chips. Stir gently. Press mixture into a large baking sheet lined with parchment paper. Bake 8-12 minutes (more if you want them crunchy). Cut into bars while warm. Enjoy!
