Good Gravy

Here's a simple gravy recipe that produces good results. Serve with mashed potatoes, meatballs, chicken, or pork.

Yields approximately 1.5 c

2 tbsp butter (olive oil works, too)
2 tbsp flour
2 tbsp onion, grated
1 clove garlic, minced
1/4 c sweetened sherry
1-1/2 c water
1 tsp Worcestershire sauce
2 tsp  chicken or vegetable base (I use Better Than Bouillon)
salt and pepper to taste

In a small saucepan, met butter over medium, add garlic and onions and allow to simmer at low heat until onions soften, about 5 minutes. Add flour and stir with a flat wire whisk while cooking for 30 sec. Add remaining ingredients, stir to combine and increase heat to high. Once boiling allow to simmer for about 30 sec, stirring continuously. Serve immediately.
