Batter Fried Chicken

1 litre (quart) water
1/4 c. salt
1/4c. sugar
4 lbs. chicken parts, cut into equal size pieces

1 c. flour
1 c. cornstarch
1 tsp. pepper
1 tsp. paprika
1/2 tsp. cayanne
1/4 tsp. salt
2 tsp. baking powder
1-3/4 c. water

3 qt. vegetable

Dissolve salt and sugar in water. Add chicken pieces. Cover, place in fridge for at least 1 hour. Combine dry ingredients in a large bowl and mix. Add water and whisk. Set in fridge until the chicken is finished brining.

Drain chicken and then pat dry with paper towels.  Heat 3 qt. of oil to 350F in a large Dutch Oven. 

Stir the batter. Add four pieces of chicken to the batter with kitchen tongs. Add chicken pieces to hot oil one at a time. Cook for 12-15 minutes, turning two or three times during cooking. Remove the chicken from the oil an place on a wire rack and allow to cool 5 minutes.

Use the leftover batter for onion rings!
