2 pounds potatoes, preferable yukon gold or russets
1 qt water
1/4 c. salt
1/4 c. sugar
2 Tbsp. vegetable oil
2 Tbsp. cornstarch
3 qt. vegetable or peanut oil
Mix water, sugar and salt in a large bowl. Slice potatoes lengthwise into 1/4 inch wide slices. Cut into 1/4 inch fries. Add to water. Cover and allow to stand for 2 hours.
With towels, drain and pat potatoes and bowl until completely dry. Place potatoes back in the bowl. Add 2 Tbsp oil and cornstarch. Mix. Heat 3 qt. oil in large Dutch Oven to 350F. Gently add potatoes to oil with a slotted spoon and stir to keep off the bottom. Stir every 5 minutes. Cook for 10-15 minutes until fries are beginning to turn a rich brown. Remove to a wire rack and drain. Sprinkle with a pinch of salt. Serve immediately with ketchup and mayonnaise.
