Crepes

Makes enough for 4 people
Ingredients
1/2 tsp. oil
5 oz. flour, all purpose
1 tsp. sugar, white
1/2 tsp. salt
1.5 c. (12oz) whole milk
2 Tbsp. butter, unsalted, melted and cooled
2 eggs

Method
Lightly oil pan with 1/2 tsp. oil. Preheat over low heat for at least 10 minutes. In a large bowl, mix dry ingredients. In a separate bowl, mix wet ingredients. Combine wet into dry and stir. Don't worry about over-mixing - the dough is too wet for excess gluten development to be a problem.

Increase heat to medium for 1 minute to allow pan to warm to temperature. Pour in 1/4 c. batter and swirl around in pan. Cook for ~30 seconds, until top is bubbly and starting to pull away from pan. Flip carefully with a spatula and cook on the other side. Place on a wire rack while you make the remainder of the crepes.

Serve with whatever toppings you like!
